Cashew Chicken with Noodles

Cashew Chicken with Noodles
Recipe from Taste of Home
Serves 8

16 oz uncooked thick rice noodles
1/2 Cup reduced-sodium soy sauce
4 Tbsp cornstarch
6 Garlic cloves, minced
3 Boneless, skinless chicken breasts, cubed
2 Tbsp peanut oil (or canola oil)
2 Tbsp sesame oil
12 green onions, cut into 2-inch pieces
2 Cups unsalted cashews
4 Tbsp sweet chili sauce

Cook rice noodles according to package directions.

Meanwhile, in a medium sized bowl, combine the soy sauce, cornstarch and garlic.  Add chicken.  In a large skillet or wok, saute chicken mixture in peanut and sesame oils until no longer pink.  Add onions; cook 1 minute longer.

Drain noodles; stir into skillet. Add cashews and chili sauce and heat through.

Easy Chicken Stroganoff

Easy Chicken Stroganoff

2 Tbsp butter
1 lb skinless, boneless chicken breasts, cut into strips
6 oz sliced mushrooms
1 medium onion, chopped
1 (10.75 oz) can cream of chicken soup
1/2 cup sour cream
4 cups medium egg noodles (or other noodle), cooked and drained
Chopped fresh parsley

Heat 1 Tbls butter in a 10 inch skillet over medium heat.  Add the chicken and cook until its browned, stirring often.  Remove the chicken from the skillet and set aside.

Heat the remaining butter in the skillet.  Add the mushrooms and onion and cook until they're tender, stirring occasionally.

Add the soup and sour cream and heat to a boil.  Return the chicken to the skillet and cook until the chicken is cooked through.  Serve the chicken mixture over the noodles.  Garish with parsley, if desired.

Fish Tacos

Fish Tacos

Serves 4

1 lb boneless, skinless tilapia fillets, cut into 2 inch pieces
2 Tbsp extra-virgin olive oil
Coarse salt and ground pepper
1/4 cup sour cream

1 cup fresh cilantro
1 small white onion, finely chopped

1 lime, half finely zested and juiced, half cut into wedges
Hot sauce, such as Tabasco
12 corn tortillas
1/2 small head red cabbage (or regular cabbage), thinly sliced


Heat broiler, with rack in highest position.  Pat fish dry with paper towels and gently coat with oil on a rimmed baking sheet. Season with salt and pepper.  Broil until fish is browned on top and flesh is opaque throughout, 5 minutes.

Meanwhile, in a small bowl, combine sour cream, cilantro, onion, lime zest and juice, and a few dashes hot sauce.  Season with salt and pepper.  Toast corn tortillas over a kitchen burner using tongs or wrap in parchment-lined foil and heat in oven, 5 minutes.  Divide fish evenly among tortillas and top with cabbage. Serve with lime sour cream and lime wedges.

Cheese Steaks with Peppers

Cheese Steaks with Peppers

Serves 4

1 Tbsp plus 1 tsp vegetable oil, divided
1 Medium yellow onion, thinly sliced
2 small red bell peppers, thinly sliced
Salt and pepper
1 lb minute steak (top round or top sirloin), cut into thin strips
1/2 cup evaporated milk
1 tsp Dijon mustard
1 cup shredded provolone (4 oz)
4 hoagie rolls, split

In a large skillet, heat 1 tbsp oil over medium.  Add onion and peppers and season with salt and pepper.  Cook, stirring until softened, about 10 minutes.  Transfer to a plate.  Add remaining teaspoon oil to skillet and increase heat to medium-high.  Add steak, season with salt and pepper, and cook, stirring, until cooked through, 2-3 minutes.

Meanwhile, in a small pot, heat evaporated milk and Dijon over medium until hot.  Remove from heat and whisk in provolone until smooth.  Season with salt and pepper.  Divide steak and vegetables among rolls and drizzle with sauce.

Mango Chicken

Mango Chicken

4-8 Chicken breast (grilled and sliced)
2 Tbsp chopped fresh ginger
1 Tbsp chopped garlic
1 Tbsp cilantro
1 Tbsp soy sauce
1 Cup Thai sweet chili sauce
1 Medium red bell pepper (julienne)
1 Fresh green Thai Chilies, minced (optional for spicy)
1 Ripe mangos, diced

In a medium pan, saute the ginger and the garlic. Add the rest of the ingredients except the mano and simmer for 4 minutes. Finally, add the mango and let simmer for an additional 2 minutes. Serve immediately.

Serve over rice.

Apple Gouda Quesadillas

8 (8 inch) tortillas
2 Tbsp olive oil
2 Tbsp dijon mustard
2 Green onions, chopped
2 Red apples, cored and thinly sliced
2 Cups shredded Gouda cheese

Preheat grill for high heat. Brush oil on one side of tortilla and place on a plate oil side down. Spread about a 1/2 Tbsp mustard on the top side and top with green onions, apple slices, and about 1/2 cup shredded cheese. Fold over tortilla and cook on both sides until cheese is melted.

Avocado Mango Salsa

Avocado Mango Salsa

1 Mango, peeled and diced
1 Red bell pepper, seeded and diced
3/4 Cup chopped red onion
1 Tbsp white sugar
1 Tbsp olive oil
2 Tbsp white wine vinegar
1 Avocado, peeled and diced
1 tsp salt
(I added about 2 tsp lime juice)

Toss together mango, bell pepper, onion, sugar, oil, and lime juice. Gently fold in avocado. Season with salt.

Mexican Chicken

4 Skinless, boneless chicken breasts
1 Clove garlic, minced
Salt
Pepper
Cumin
1 Cup salsa
1 Cup cheddar cheese, shredded

Preheat oven to 375.

(I cut and flattened the chicken breasts.) Rub chicken with garlic and a light sprinkle of salt, pepper, and cumin. Heat pan over medium heat (I used medium-high heat to sear the edges first). Cook until brown on the outsides and no longer pink in the middle (I seared the edges and cooked with a lid on top to cook the chicken faster and not dry it out).

Place chicken in 9x13 baking dish. Top with salsa and cheese. Bake for 15-20 minutes or until cheese is melted and bubbly.

Serve over rice or noodles.

Papa's Tri Tip Roast

Tri Tip Roast
Lawry's Seasoning Salt
Garlic Granules (or Garlic Powder)
Black Pepper (not fine ground)

Cover tri tip with Lawry's seasoning salt, massage into roast. Then cover with garlic granules, massage in. Cover with black pepper, massage in.

Let marinate in fridge for 24 hours.

Cover a rimmed baking sheet with tin foil and put roast on sheet. Set oven to broil, rack on an upper rack. Stick roast in the oven for 5-10 minutes on each side or until roast is seared on the edges. (If using a thinner roast or other steak then it may be done after this depending on how cooked you like your steak.) Then stick the roast on a lower rack (continue to broil) for another 5-10 minutes on both sides (just watch it and take it out when steak is cooked how you like it).

*You can boil and flatten potatoes up to 8 hours ahead. Let them cool completely then store in the fridge.

Red Potatoes (12 - 15)
Rosemary
Salt
Pepper
Olive Oil (1/4-1/2 Cup)

Put potatoes in a large saucepan (preferably one layer) and add at least one inch of water on the bottom. Add salt to the water. Bring the water to a boil, then reduce to simmer. Cook potatoes until they are completely cooked and is easily pierced with a metal or wood skewer. make sure they are cooked but not overcooked. The total cooking time will be 30-35 minutes.

While the potatoes are cooking, set up a double layer of clean dishtowels on countertop. As the potatoes finish cooking, remove them individually and let them drain and sit for just a minute or two on the dishtowels.

Fold another dishtowel into quarters or grab something (like the bottom of a cup) to flatten potatoes. Use dishtowel as a cover and gently push down on one potato with the palm of your hand to flatten it to a thickness of about 1/2 inch. Continue with all potatoes. Don't worry if some break apart a bit; you can still use them.

Cover a large rimmed baking sheet with aluminum foil or parchment paper. Transfer the flattened potatoes carefully to the baking sheet and let them cook completely at room temperature. (If cooking ahead of time, cover lightly and then put potatoes in the fridge).

Remove the pan of potatoes from the refrigerator, if prepared ahead. Heat the oven to 450. Sprinkle the potatoes with salt, pepper, and rosemary. Then drizzle olive oil on top. Roast the potatoes until they are prispy and deep brown around the edges, about 30 minutes turning once gently witha spatula or tongss halfway through cooking. Serve hot.

Lemon Garlic Tilapia

Lemon Garlic Tilapia (or most any fish)

4 Tilapia Fillets
3 Tbsp fresh lemon juice
1 Tbsp butter, melted
1 Clove garlic, finely chopped (I cooked it over a stove for a bit)
1 tsp dried parsley flakes
Pepper to taste

Preheat the oven to 375. Spray a baking dish with a non-stick cooking spray. Rinse tilapia fillets under cool water, and pat dry with paper towels. Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper. Bake in preheated oven until the fish is white and flakes when pulled apart with fork, about 30 minutes.

Buttermilk Biscuits

Buttermilk Biscuits

1/2 Cup butter
1/4 Cup club soda
1 Egg
3/4 Cup buttermilk
4-5 Cups Bisquick

Mix ingredients together until dough forms. Flatten out dough to 1 inch thickness. Cut out with a circular cutter (I used a cup) abotu 2 inches in diameter. Place on cookie sheet and cook at 450 for 10-13 minutes (until tops are lightly browned).

Healthy Mac and Cheese

Healthy Mac and Cheese

3 Tbsp olive oil
3 Tbsp flour
3 Cups uncooked macaroni noodles
12 oz can Evaporated milk
1/2 Cup Squash puree (I used yellow)
1 tsp salt
1/2 Cup cheese (I used Colby Jack)

In a saucepan, stir olive oil and flour over medium heat and stir constantly until thickens. Then add milk, squash, salt, and cheese. Stir until thickens.

Meanwhile, cook macaroni noodles.

Combine and let sit for 5 minutes to thicken up.

Crockpot BBQ Chicken and Oven Fries


Crockpot BBQ Chicken and Oven Fries

BBQ Chicken

1 1/2 lbs Chicken breasts (about 4 nice-sized ones)
1 18-oz bottle of BBQ sauce (I used Sweet Baby Rays)
1/2 Cup brown sugar
3/4 Cup Italian dressing
2 Tbsp Worcestershire sauce
Buns and other condiments you desire

Place chicken in crock pot. Mix all other ingredients in a mixing bowl. Pour over chicken and cook on low for 6-8 hours or on high for 3-4 hours. Once chicken is tender, shred chicken.

Oven Fries

2-3 Large baking potatoes
1 1/2 tsp Salt
1/2 tsp Pepper
1 Tbsp white sugar
1 tsp olive or vegetable oil

Wash, dry, and cut potatoes up into large, steak fry sized pieces. Place cut fries into a large, resealable bag. Add in salt, pepper, sugar, and oil. Seal and shake until potatoes are completely coated. Place tin foil on a baking sheet and place potatoes onto the lined baking sheet. Bake at 450 for about 30 minutes or until fries are tender and brown (crispy on outside).

Chicken Broccoli Casserole

Chicken Broccoli Casserole
Recipe from my mom

1/2 Chicken, cooked and diced (or 2 large chicken breasts)
16 oz. pkg broccoli
1 Can cream or mushroom or cream of chicken soup
2-3 Large spoonfuls of mayo or Miracle Whip (more or less to your liking)
1 tsp lemon juice (a bit more if using mayo)
1/2 tsp curry powder
Grated cheese

Layer broccoli and then diced chicken in greased casserole dish. Mix together mayo, lemon juice, curry powder, and cream of mushroom soup. Spread over chicken. Top with grated cheese. Bake at 350 for 35 minutes or until cheese is barely brown. Serve over rice.

Pineapple Bacon Burgers

1 lb. ground beef
4 slices bacon
4 slices pineapple
BBQ sauce
4 Hamburger buns

Combine beef and 2-3 Tablespoons BBQ sauce. Form into patties (add some breadcrumbs if it is having a hard time forming into patties). Cook both sides on the stove or grill until cooked through.

Meanwhile, fry the bacon and grill pineapple (although I didn't cause I only had crushed pineapple and wasn't cooking on the grill).

Put the burger on the bun, followed by some more BBQ sauce, pineapple, and bacon.

Samburgers

1 1/4 Ground beef
3 Tbsp A1 Sauce (I used Worchester sauce)
1 Tbsp Dijon mustard
1/2 tsp salt
1/4 tsp pepper
2 Cloves garlic, minced
3/4 tsp oregano
1 Tbsp dehydrated onion
Other burger condiments

Mix all ingredients together and form into patties. Cook both sides on the stove or BBQ until cooked through.

Chicken and Spinach Casserole

Chicken and Spinach Casserole

2 Cups torn bread
Olive oil
Salt and Pepper
4 Cups flat-leaf spinach
1 Medium onion, finely chopped
1 Garlic clove, minced
1/4 Cup white wine (I used apple juice)
2 Tbsp flour
1 1/2 Cups half and half (I used evaporated milk)
1/2 tsp fresh lemon juice
1 Cup rotisserie chicken, shredded

Preheat oven to 450. In a medium bowl, combine bread with 1 Tbsp olive oil and salt. Set aside. In a medium pot, heat 1 1/2 tsp oil over medium high. Add spinach and season with salt. cook, stirring, until wilted (2 minutes). Transfer to colander, let cool, then squeeze out water. Coarsely chop.

Wipe pot clean and heat 1 1/2 tsp oil over medium. Add onion, garlic, salt and pepper (to taste). Cook stirring occasionally, until onion is soft, about 8 minutes.

Add white wine to pot and cook until almost evaporated, about 5 minutes. Add flour and cook, stirring, 30 seconds. Gradually whisk in half and half. Add lemon juice and bring mixture to a boil over high.

Remove from heat and stir in spinach and rotisserie chicken; season with salt and pepper. Transfer to a 2 quart baking dish and top with bread pieces. Bakeu ntil braed is golden brown and mixture is bubbling, 8-10 minutes.
